- Stick blend in short bursts — don’t overdo it or you’ll seize.
- Work at cooler temps (~90–100°F oils/lye).
- Use a piping bag once it hits a thick pudding consistency.
- Practice batches — the recipe sets fast, so move quickly.
- If you want stiffer peaks, let it rest for 1–2 minutes after blending before piping.
