2 days later, and this loaf is still quite soft. I moved it from the bathroom, where the window is open, to the hotpress, which is a lot warmer, but maybe not as much air flow. I won't be demolding for another few days.
Turns out my INS number was far too low at 137, whereas it should be between 136 and 165 and obviously I should have nudged it up more toward the higher figure.
